Brie, bacon and avocado sandwich

Joe specifically requested I make him this sandwich after he completed the detox with me. I told him he could have anything, but he saw this on the cover of Toronto Life's Eating and Drinking guide and my loosely based version turned out to be an amazing and simple choice. I used ciabatta buns and spread a little apple butter on as well. Amazing brunch sandwich.


Brie, bacon and avocado sandwich with apple butter


You'll need:

1 wedge good brie
4 ciabatta buns
1 ripe avocado
8 slices applewood smoked bacon, fried
apple butter
olive oil

Directions:

Cook bacon. Slice rind off brie and cut wedge vertically into slices as best you can (because it's creamy, it's tough). Slice avocado in half, remove pit and cut vertical slices.

Heat indoor grill to medium heat.

Cut buns in half and spread butter onto top half, cover with avocado slices (3-4). Put brie on bottom of bun with two pieces of bacon on top. Assemble sandwich and brush olive oil onto top and bottom and place sandwich on grill.

Pressing down on sandwich, let it cook for 5 minutes. Flip over and cook another 5 minutes or until cheese melted.


Serves 4.
