Tasty detox DIY brunch



After a party Saturday, I invited some friends over for Sunday brunch as it is much cheaper than those $14 breakfasts we pay for when we're hungover and want someone else to cook for us.

I warned them that I was making "cleanse" food, but seeing as it was free, they didn't seem to mind.

Now, I should put it out there that my absolute favourite brunch of all time is huevos rancheros or something equally Mexican. Because I'm not a huge fan of eggs, its nice to have guacamole, beans and tortilla.

A detox version of this, I quickly discovered, is actually not much different (sans cheese, sour cream, store bought salsa and hot sauce). Instead, I made a tomatillo salsa. Also, the corn tortillas are questionable, saw mixed opinions online. But since they're homemade from the store across the street from me, and had corn, not wheat I gave them the a-ok. We also had fresh greens with a lemon/ sesame oil dressing and cleanse-friendly home fries (using butter, onions and lots of spices).

Here is the result:

Cleanse-friendly huevos rancheros


You will need:

1 can organic kidney beans (or black beans), well rinsed and drained
8 eggs (two per person)
3 green onions, sliced
1 red pepper, diced
1 ripe avocado, sliced
12 cherry tomatoes

For salsa verde:
6 tomatillos, chopped
1/4 jalapeno pepper, chopped
1 clove garlic, minced
2 tbsp fresh cilantro, torn
2 tbsp fresh basil, torn

Directions:

1) In large sauce pan cook kidney beans on medium-low heat.

2) Preheat oven to 200F.

3) Make salsa. Put chopped tomatillos, jalapeno, garlic, cilantro and basil in blender or food processor and blend until it is think but not soupy.

4) Mash up kidney beans.

5) Grease egg pan with butter (more acceptable than cooking with oil for some reason. Start cooking eggs, two at a time (or more if you can fit them in your pan).

6) While eggs are cooking, chop up all veggies for garnish.

7)When eggs are at your desired consistency, spread beans with spatula onto tortilla. Place corn tortillas with beans on top of eggs in frying pan and flip over. It's a delicate balance of quick and slow timing to get them perfectly round.

8) Plate tortilla eggs and put plates in oven to keep warm.

9) When all eggs/tortilla combinations are ready garnish with veggies. Pour salsa over top. Serve with salad and home fries if desired.

Serves 4.
